Hi and Welcome to the forum, you might want to have a look at the following FAQ which explain where everything is
Welcome to Benefits and Work
It's impossible to say exactly how much information someone should submit. Try to limit yourself to things that confirm your diagnosis and/or link to the PIP descriptors. However, if you do send some thing in, DWP can ignore it if they want. If you don't send something then DWP won't have the chance to consider it!
Have a good look at the PIP guide so that you understand the criteria against which you are being assessed. Try to tailor your form and evidence to this.
PIP help for claimants
May I suggest that you bookmark/favourite this on your web browser now so that you can find it easily in future? This will allow you to return with further questions or comments about your PIP without having to start a new topic each time. It helps us enormously when everything relating to the same claim is kept in one topic - and I hope you will find it useful too

They will only do a Paper assessment if there is sufficient information in and with the PIP2 for them to be able to make a recommendation to the DWP.
I would check with the Assessment Provider if you are given an appointment about the facilities as the venue. If you are limited to a scooter or wheelchair then it would be a Health & Safety issue if you are not assessed on the ground floor.
