The reminder letter is produced automatically by the PIP computer system just over a week after the PIP2 is issued as it takes about 10 days to be printed, enveloped and then posted 2nd class, so this process started before you even requested an extension to the time to return your form, which is why the new date is not included on the letter.
You've confirmed that the new date is registered on the DPW systems so you can ignore the letter.
