If I don't fit a descriptor 100%, should I tick no, it varies or leave it blank. Obviously I am going to qualify the answer by writing more information in the box below. But what is the best policy on ticking the boxes?

This scenario is covered in our : ESA Claims Guides 3rd and 4th links down.
If it varies, then state so, even if this option is not availabe in the tick box options, don't be tempted into ticking No if this does not completely cover the limitations that you suffer.
If you suffer limitations with respect to any of the questions/activities for the majority of the time then you should be classed as not being able to carry out that activity.
ESA Reg 34 (2) : “A descriptor applies to a claimant if that descriptor applies to the claimant for the majority of the time or, as the case may be, on the majority of occasions on which the claimant undertakes or attempts to undertake the activity described by that descriptor”
Try to make the questions fit in with your limiations rather than being restricted to "black and white" tick box options, unless of course your response is "black or white".
