Online claim system, but can we actually fill in the pip1 online and submit it? That is better option than using the phone.

In the pip guide it says the pip1 form is completed over the phone and then they send it out for you to sign.
Is this still correct? How long do you get to return the pip1?
It then says you get sent a pip2. Is this after they have recieved your signed pip1? Again how long do you get to return the pip2?

The PIP1 is no longer sent out for the claimant to check and sign. The PIP2 usually arrives within a couple of weeks of the claim being initiated. The claimant has 4 weeks to complete it but this includes postage in both directions. DWP usually give a 2 week extension on request, just phone them when you have the form if you think you will need the extra time.

When PIP was first implemented the PIP1 was send out for signature, this now only happens where additional information is required, which is very rare.
You will be given four weeks to complete and return the PIP2, although you can request a two week extension.

Seems a bit dodgy that you can verbally agree to releasing of medical information without a signature.
