You are correct with your post.
You can fill in the online PDF form and send it in, your claim will start from when DWP receives the form, so do send it in by recorded delivery.
If you phone DWP for the form, the form will be date stamped, the day you called, you usually have 6 weeks to return it completed, if it is later than that, then your claim will start from the date they receive the form, unlike PIP you cannot phone DWP and ask for an extension.
Your claim will not be cancelled as it does not start until they receive your form, there is no barcode or QR code on the form.
