You certainly need to organise the recording in advance as not every assessor will agree to being recorded. You can phone Maximus/HAAS but should also send a letter to the address on top of your appointment letter (not to the assessment centre itself).
DWP will usually only release a copy of the assessor's report after the decision has been made - but there is no harm in asking sooner! I would suggest giving it a week or two after the assessment before you contact them and ask. There is no benefit in asking them before the assessment has been carried out.

First of all I would phone Maximus to check.

You can re-arrange your appointment once, you will then have to attend the next appointment, wherever and whenever it is arranged for and whether it is recorded or not.
It is important that you understand that you have no legal right to require that the assessment is recorded and the DWP will not accept the assessment not being recorded as Good Cause for failing to attend or participate.

They can take notes and collaborate what went on during the interview if necessary.
Claimants with conditions or disabilities that would restrict there ability to attend on their own will likely be marked down if they do, having a companion can offset many of these problems, by their providing logistical, physical or mental support of the claimant.
